It’s one of those meals that feels a little extra but is actually very doable at home, especially on the Blackstone.
Between the savory marinated chicken, buttery fried rice, crisp veggies, and homemade yum yum sauce, it’s a full hibachi experience without leaving your backyard.
The key to getting that restaurant style flavor is prep and timing. A little planning goes a long way here, and once everything hits the griddle, it comes together fast.
Let me explain how we made this yummy hibachi at home!
Prep Ahead: Make the Rice the Day Before
This step is important, so don’t skip it. Hibachi style fried rice works best with cold, day old rice.
Cook your rice the day before, let it cool completely, then store it in the fridge overnight.
Cold rice fries up better, doesn’t get mushy, and gives you that perfect texture you want in hibachi fried rice.
Marinate the Chicken
The chicken marinade is simple but packed with flavor and really makes this dish shine.
Chicken Marinade Ingredients
- 1 lb boneless, skinless chicken breast
- ¼ cup soy sauce
- 3 tablespoons olive oil
- 2 tablespoons minced garlic
- 1 teaspoon honey
- Salt and pepper to taste
Cut the chicken into bite sized pieces. In a bowl, mix together the soy sauce, olive oil, garlic, honey, salt, and pepper.
Add the chicken and toss to coat well.
Let it marinate for at least 2-3 hours, I did it all day!
Fire Up the Blackstone
Preheat your Blackstone grill until it’s nice and hot. You want a good sizzle when food hits the griddle.
Add a little oil or butter to the surface, hibachi cooking is not shy with fat, and that’s where a lot of the flavor comes from.
Start with the Fried Rice
Crack one egg directly onto the griddle and scramble it quickly. Once it’s mostly cooked, add your cold rice right on top.

Stir everything together, spreading the rice out so it can fry evenly. Add soy sauce to taste and a little butter as you go.
Keep moving the rice until it’s heated through and lightly crispy in spots.

Once done, push the rice to one side of the Blackstone to make room for the rest of the cooking.
Cook the Chicken
On the left side of the Blackstone, add the marinated chicken. Spread it out so it cooks evenly and let it sear before stirring.
Cook until the chicken is fully cooked through and lightly browned.
Once done, move the chicken over and go ahead and take the rice off (I just moved it to a serving bowl).


Add the Veggies
Now it’s time for the veggies. Add them to the open space on the griddle with plenty of olive oil and butter.
Season lightly with salt and pepper.

If you’re cooking a lot of vegetables, it helps to move the chicken off the griddle so everything has room to cook evenly.
Sauté the veggies until tender but still slightly crisp, adding more butter or oil as needed for flavor.

Once the veggies are done, bring the chicken back and toss everything together if you’d like — or keep it separate for serving.
I went ahead and put the chicken in a serving bowl and removed from the blackstone to let the veggies have more room to cook.
Make the Homemade Yum Yum Sauce
No hibachi meal is complete without yum yum sauce, and this homemade version is easy and so much better than store bought.
Yum Yum Sauce Ingredients
- 1 cup quality mayonnaise
- 2 tablespoon ketchup
- 2 tablespoon melted butter
- 2 teaspoons apple cider vinegar
- ¼ teaspoon paprika
- ¾ teaspoon garlic powder
- ¾ teaspoon onion powder
- 1-2 tablespoon granulated sugar
- 1–2 tablespoons water (more or less depending on how “thin” you like it)
Whisk everything together until smooth. Adjust thickness with water and taste as you go.
Chill if you have time, but it’s great right away too.
